Rachel's favourite brunch recipe!
Serves 4: 2 tsp tom puree, 4 tbsp double cream, salt & pepper & sugar. 16 thin slices of chorizo (2cm) 8 eggs, 2 generous tbsp grated cheese - gruyere or similar. Pre heat oven to gas 8, 450f, 230c.
Mix tom puree with cream and season (inc pinch sugar). Spoon half the cream mixture into the bsae of two ovenproof ramekins. Add two slices of chorizo to each dish, then crack two eggs into each dish, top with remaining slices of chorizo. Spoon over the remaining tomato cream, then sprinkle with grated cheese. Place in hot oven, and cook for 9-12 minutes, or until the white are set. Serve with hot buttered toast!
